Beef & Pickle Cheeseburgers with Hot & Sour Honey

Looking to recreate some Burger Nation magic at home? If you like you're burgers juicy with a good pickle tang you'll want to try this on for size!

Makes 2 burgers

HOT & SOUR HONEY

  • 3 tbsp olive oil
  • 2 tbsp honey, gently heated to liquefy
  • 2 tbsp pickle brine from McClure’s Whole Spicy Pickles
  • ½ tsp chilli flakes
  • ½ tsp salt

SMOKY CUMIN MAYO

  • ½ cup mayonnaise
  • ½ tsp smoked paprika
  • ¼ tsp ground cumin
  1. Start by preparing the Hot & Sour Honey. Whisk together all ingredients in a small bowl to combine, and set aside.
  2. To make the Smoky Cumin Mayo, add the mayonnaise, smoked paprika and cumin to a small bowl. Mix to combine, and set aside.
  3. Heat a drizzle of olive oil in a frying pan or BBQ hot plate over medium heat. Add the frozen burger patties and cook for 10-13 minutes, turning every 3-4 minutes until deeply browned and cooked through. Place a slice of cheese on top of each patty and cover with a heatproof metal bowl, to let the cheese melt. Cook for 2-3 minutes until the cheese is melted. Use a pair of tongs to remove the bowl gently, then remove the burger patties from the heat.
  4. To assemble, generously spread the cut side of both top and bottom burger buns with the smoky cumin mayo. Place a few lettuce leaves over each bottom bun, followed by a few slices of tomato, the patties and the pickle slices. Divide the sauerkraut between the burgers and place on top. Drizzle generously with the Hot & Sour Honey, and add the top buns. Enjoy immediately.
